Cathy & Woody Sanderson’s Senator Russell’s Sweet Potato Soufflé

Ingredients: 3 cups sweet potato, 1 cup sugar, 2 tsp vanilla, 2 large eggs, 4 tbsp melted butter, 1/4 cup milk, 1/2 tsp salt

TOPPING: 1 cup brown sugar, 1/3 cup all purpose flour, 1/2 cup chopped pecans, 1 tsp salt, 1/2 stick melted butter.
