Denise Childs’ Christmas Salad
This gorgeous Brussels Sprout, Quinoa, Cranberry Salad comes together so easily and the flavors marry beautifully - perfect to throw together and keep in your fridge (ready to go!) all Christmas season!
Ingredients:
1 lb Brussels sprouts shredded, 2 cups cooked quinoa, 1 cup dried cranberries, 2/3 cup chopped pecans (toasted is better!), 1 med shallot, finely chopped
Vinaigrette:
1/4 cup fresh squeezed orange juice, 1/4 cup olive oil, 2 tbsp apple cider vinegar, 2 tsp Dijon mustard, Sea salt + fresh cracked pepper.
